Caramelized onion spinach feta bacon pinwheels

1 sheet puff pastry
6 slices bacon, chopped & cooked
2 oz crumbled feta cheese
3 oz aged white cheddar, shredded
2 small onions, thinly sliced
3 tbsp butter
1 cup chopped spinach
1 tbsp sugar
salt & pepper
flour, for surface
egg wash:
1 egg yolk plus 1 tbsp water
Preheat oven to 400 degrees.
Over medium heat add butter to pan and cook onions, stirring occasionally. Once onions begin to change color, add in sugar and cook until caramelized. This can take up to 40 minutes. Turn off heat and add in chopped spinach, stirring until it is wilted.
Roll out puff pastry on lightly floured surface, brush with egg wash all over. Cover the entire surface of the pastry dough with feta, bacon, onion & spinach mixture and white cheddar. Season with salt & pepper. Begin rolling at the bottom (shortways). Cut into about 20 pieces or 1/2 inch pieces. Brush top with remaining egg wash. Bake for about 15 minutes or until cooked through and lightly browned.
