2 tbsp vegetable oil, divided
4 eggs beaten
7 strips bacon, cut in pieces
1/2 cup diced red bell pepper
1/2 cup diced green bell pepper
1 cup chopped onion
1 clove garlic, minced
4 cups cold day old rice
1/4 cup soy sauce
1 tbsp hoisin sauce
1 tbsp oyster sauce
2 tsp sugar

Cook bacon and remove from pan, reserving the grease. Add in bell peppers, onions & garlic. Cook until soft. Move everything to one side of skillet or wok and add oil and then eggs. Scramble the eggs. Make room for rice and add in, breaking up with a spatula. Cook for a minute and then add in remaining ingredients. Stir to incorporate ingredients. Add bacon back in. Enjoy!
Optional: Add chopped green onions and yum yum sauce before serving.
