Jambalaya 🔥

1 lb andouille sausage
1 lb shrimp, tail off deveined (I seasoned with seafood seasoning and a little olive oil)
1 onion, diced
1 bell pepper, diced
2.5 cups chicken broth
1 1/4 cup long grain rice
14 oz can diced tomatoes
2 tbsp oil
2 tbsp butter
2 tbsp flour
1 tbsp dried basil
1 tbsp Cajun seasoning
1/2 tsp paprika
1/4 tsp salt
1/2 tsp pepper
1 tsp garlic powder
1 tsp onion powder
Pinch of cayenne pepper
Parsley for garnish
Add oil to pan over medium high heat and cook shrimp on each side 2 minutes. Remove from pan and brown sausages. Put aside.
Reduce to medium heat. Add in butter and then flour. Add in peppers and onions, cook for approximately 2-3 minutes. Add in seasonings, broth, tomatoes and rice. Bring to a boil and then reduce heat. Cook for 20-25 minutes covered. Add in shrimp & sausage. Garnish with parsley.
