JALAPEÑO BACON CHEDDAR BUTTERMILK CORNBREAD RECIPE

4 slices bacon, chopped
3-4 jalapeños, sliced thinly
1 cup shredded cheddar cheese
1.5 cup buttermilk
1 cup yellow cornmeal
1 cup all purpose flour
1.5 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1 tsp garlic powder
2 tbsp brown sugar
1 tsp granulated sugar
2 large eggs
3 tbsp melted unsalted butter
Oven to 400 degrees.
Cook bacon in a large cast iron skillet . Leave the grease!
Mix together eggs, buttermilk and melted butter. Add in bacon, cornmeal, flour, both sugars, baking soda, baking powder, salt and garlic powder. Next add in half of the jalapeños and all the cheese.
Pour batter into the skillet with the bacon grease. Top with remaining jalapeños.
Bake at 400 approximately 25-27 minutes. Check for doneness with a toothpick. Enjoy!
Optional add-in: caramelized onions
*Also you can make a honey butter to brush over the top by mixing equal parts melted butter and honey together.
