Cheesy kielbasa, fried potatoes, peppers & onions cheese sauce

1 1/4 cup heavy cream
2 tbsp butter
5 oz cheddar l, shredded
1 oz cream cheese
2 oz gruyere, shredded
1/2 tsp ground mustard
6 potatoes, cut in 1 inch pieces
oil for frying
1 lb kielbasa, cut in 1/2 in pieces
1/2 cup red bell pepper
1/2 cup green bell pepper
1 medium onion, cut in strips
1/4 tsp chili powder
1/2 tsp pepper
1/2 tsp seasoning salt
3 tbsp olive oil
CHEESE SAUCE:
Heat cream, cream cheese & butter over medium heat. Add in ground mustard. Once fully incorporated remove from heat and stir in cheeses.
POTATO, KIELBASA & ONIONS
Heat vegetable oil to 375 and fry potatoes until golden brown. In a separate skillet over medium- high heat add olive oil and cook onions & bell peppers. Season with chili powder and pepper. Add kielbasa and cook until onions are translucent and kielbasa is browned. Add seasoning salt. Remove from heat.
Add in potatoes & add cheese sauce. Garnish with parsley.
