Butternut squash boats with Italian sausage, cranberry, spinach, sweet onions and walnut 😍

Cut squash in half, season with olive oil, salt, pepper and a little smoked paprika. I roasted my squash halves at 425 for about 40 minutes, for the first 25 minutes cut side down and then flipped over.
I used mild sweet Italian sausage (2 links cut into bite size pieces), about 1/2 cup sweet onion, and cooked that until it was cooked through and then add the end added about two handfuls of spinach, 3/4 cup dried cranberries and a sprinkle of crushed walnuts and cooked until the spinach was wilted. Spoon into squash halves and garnish with parsley and Asiago or Parmesan cheese if desired
